Summer Kale Salad
Ingredients
1 small bunch kale, rinsed and dried
3 tablespoons olive oil
2 tablespoons lemon juice (1/2 lemon)
2 teaspoons honey (omit if you’re on a keto diet)
1/4 teaspoon salt and fresh cracked black pepper
1 cup fresh blueberries
1 cup fresh strawberries, sliced
1/2 cup crumbled feta cheese
Directions
Remove the tough stems from the kale and chop the leaves finely. Transfer kale to a large salad bowl.
Drizzle chopped kale with olive oil and salt, then toss with your hands to soften the kale.
Season with lemon juice and drizzle honey right over the kale. Use your hands again to work the lemon, honey and pepper into the salad. Adjust seasoning with more salt, pepper, lemon, honey, or olive oil as desired.
Sprinkle kale with sliced strawberries, blueberries, and feta cheese and serve.
